Green Moong Dal Pancake

A satvik tiffin favourite of moong dal, besan and rava — cooked the NONG way with no onion and no garlic.

Method

    Take 1½ cup green moong dal in a bowl. Wash 1-2 times. Add water and soak for 3 hours.

    Drain the water. Transfer dal to a mixer jar. Add 3 tbsp water and grind to a smooth paste.

    Transfer the paste to a mixing bowl. Add grated carrot, bottle gourd, and pumpkin.

    Add 2 tbsp ginger and crushed chilli. Mix once.

    Add salt to taste, 2 tbsp fine semolina, 2 tbsp gram flour, ½ tsp turmeric powder, 1 tsp garam masala, and 1 tsp sugar. Mix well.

    Cover and keep aside for 10 minutes.

    After 10 minutes, mix once. Divide the batter into 5 portions.

    Take one portion in a separate bowl. Add 2 pinches of baking soda and mix. Add baking soda only to each portion, not the entire batter at once.

    Heat 1 tbsp oil in a pan. Add ½ tsp mustard seeds, ½ tsp white sesame seeds, pinch of asafoetida, 1 dry red chili, and few curry leaves.

    Pour one portion ofbatter into the pan. Keep flame low and spread it well.

    Cook on low flame for 2-3 minutes. Gently flip and cook the other side for 4 minutes.

    Check with a knife - if it comes out clean, the Dawa is ready. Cook until golden and crispy on both sides.

    Repeat for remaining portions, adding baking soda to each batch separately.

    Serve with green chutney or tomato ketchup.
