Tindli South Indian Style

A satvik sabzi of tindli, peanuts and dry coconut — cooked the NONG way with no onion and no garlic.

Method

    Clean 500 grams kundru. Cut into long medium-sized pieces — not too thick, not too thin.

    Heat 3 tbsp oil in a pan. Add ⅓ cup peanuts. Fry on low flame for 3-4 minutes until golden and crispy.

    Remove peanuts to a plate.

    In the same oil, add ¼ tsp fenugreek seeds, ½ tsp mustard seeds, and ¼ tsp turmeric powder. Let them crackle.

    Add the cut kundru. Mix well on low flame.

    Cook on low flame for 12-15 minutes, stirring in between, until golden and slightly crispy from all sides.

    Add the fried peanuts, salt to taste, 1 tsp red chili powder, and ½ cup dry grated coconut.

    Mix everything well.

    Serve with rice, dal, and lemon.
