Thor Bata
A satvik sabzi of banana stem, coconut-mustard paste and mustard oil — cooked the NONG way with no onion and no garlic.

Method

Take the banana stem. Make a cut from the top and remove the outer layer. It will come off easily.

Remove the fibrous strings as you cut. Cut into small pieces.

Steam the pieces in a vessel with a ring over boiling water. Cover and steam on medium flame for 15-20 minutes until cooked. Do not boil in a pressure cooker as it changes the color.

Let the steamed banana stem cool completely (about 15-20 minutes).

Transfer to a mixer jar. Add 2 green chilies, ½ tsp mustard seeds, and 2-3 tbsp fresh coconut. Grind to a smooth paste.

Heat 2 tbsp mustard oil in a pan. Heat it well (mustard oil is traditionally used in Bengal).

Add ½ tsp nigella seeds and ¼ tsp turmeric powder. Add the ground paste and mix.

Cook on low flame, stirring occasionally, until the mixture becomes dry — about 3-4 minutes.

Add salt to taste and 1 tsp sugar. Mix and keep stirring until the sugar dissolves and the mixture leaves the sides of the pan.

The Thor er Pata is ready when it separates from the pan.

Place Tulsi leaves and offer to Lord Chaitanya Mahaprabhu (Gaur Nitai).
