Sweet Spiced Rice Pulao
A satvik rice dish of basmati rice, sugar and whole spices — cooked the NONG way with no onion and no garlic.

Method

Soak 1 cup Basmati rice in water for 30 minutes. Drain.

Soak almonds in hot water for 2 hours. Peel and set aside.

Heat ghee in a pan. Fry 10-12 cashews until golden. Transfer to a plate.

In the same ghee, lightly fry raisins until they puff up. Transfer to a plate.

Grate ¼ cup fresh coconut. Set aside.

In a pan, heat 3-4 tbsp ghee. Add ¼ cup sugar, 2 bay leaves, 3 cardamom pods, and 1 tsp cumin seeds. Mix until sugar begins to melt.

Add ¼ tsp turmeric powder. Mix.

Add the drained rice. Mix gently.

Add 2 tsp coriander powder, ¼ tsp clove powder, ¼ tsp nutmeg powder, 2½ tsp black pepper powder, and ¼ tsp cinnamon powder. Mix well.

Add salt to taste.

Add the peeled almonds and fried cashews. Mix gently.

Add 2 cups water. Mix once.

Cover and cook on low flame for 15 minutes until rice is done and water is absorbed.

After 15-20 minutes, check that rice is cooked. Mix gently.

Garnish with grated coconut, fried cashews, and raisins.
