Rajgira Kadhi

A fasting kadhi that swaps besan for rajgira (amaranth) flour, so it stays falahari. Curd whisked smooth with flour and a little sugar, tempered with cumin, green chilli and curry leaves — best ladled over sama chawal.

Method

    In a bowl, combine the curd, rajgira flour, sugar, and sendha namak. Whisk well until smooth and lump-free.

    Add 2½ cups of water to the curd mixture and mix thoroughly until well combined.

    Heat oil in a pan over medium heat. Add cumin seeds, green chillies, and curry leaves, and let them splutter.

    Add the grated ginger and sauté for a few seconds until fragrant.

    Pour the prepared curd mixture into the pan and cook on low heat for about 10 minutes, stirring occasionally.

    Turn off the heat and serve the rajgira kadhi hot with sama chawal.
