Sweet Corn Rava Idli

A satvik tiffin favourite of sweet corn paste, rava and curd — cooked the NONG way with no onion and no garlic.

Method

    Take ½ cup sweet corn in a mixer jar. Add 2-3 green chillies and 2 tbsp curd.

    Grind to a fine smooth paste.

    Transfer to a mixing bowl. Add 1 tbsp grated ginger, salt, sugar, and ¼ tsp turmeric powder. Mix well.

    Cover and rest for 15-20 minutes.

    Grease idli moulds with oil.

    After resting, mix the batter once.

    For tempering: heat 2 tbsp oil. Add 1 tbsp mustard seeds and ¼ tsp turmeric. Mix immediately into the batter.

    Add 1½ tsp fruit salt. Add 2 tbsp water over it. Mix gently.

    Pour batter into greased idli moulds.

    Steam for 15-20 minutes on medium flame.

    Check with a knife — if it comes out clean, idli is ready.

    Remove from moulds. Place Tulsi leaves and offer to Lord Jagannath.
