Sweet Corn Handwa

A satvik tiffin favourite of sweet corn, semolina and besan — cooked the NONG way with no onion and no garlic.

Method

  1. 1

    Extract 1½ cup sweet corn kernels from 1 sweet corn. Keep ¼ cup kernels aside.

    Take remaining kernels in a mixer jar with 1 green chilli. Grind to a smooth paste.

    In a mixing bowl, take ½ cup semolina, ½ cup gram flour, ½ cup rice flour, and ½ cup curd.

    Add the sweet corn paste, ¼ cup water from the mixer jar, and mix well.

    Add salt to taste, ¼ tsp turmeric powder, 1 tbsp coriander powder, 1 tsp red chilli powder, and 1 tsp grated ginger.

    Add ½ cup finely chopped capsicum, ½ cup grated carrot, ¼ cup sweet corn kernels, and 2 tbsp finely chopped coriander.

    Add ¼ cup water and mix. The batter should be thick but pourable. Cover and rest for 15 minutes.

    After 15 minutes, add a pinch of baking soda and ½ tsp lemon juice. Mix immediately. Add soda to each portion separately, not the entire batter. For Cooking:

    Heat 1 tbsp oil in a pan. Add ½ tsp mustard seeds, ½ tsp cumin seeds, ¼ tsp fenugreek seeds, and 1 tbsp sesame seeds. Let them crackle.

    Pour a portion of batter into the pan. Top with sweet corn kernels and sprinkle red chilli powder.

    Cover and cook on low flame for 3-4 minutes. Check occasionally.

    Once the top is set and golden, gently flip. Cook the other side for 3-4 minutes until crispy and golden.

    Remove to a plate. Repeat for remaining batter, adding baking soda to each portion separately.

    Serve with tomato ketchup or green chutney.
