Singhara Atta Cheela
Singhara atta cheela is a one-bowl vrat pancake: water chestnut flour whisked with green chilli, coriander, cumin, turmeric and crushed black pepper into a pourable batter. Spread it gently without going too thin, because the cheela can stick, and let it cook about two minutes a side with a little ghee and sesame seeds. It uses only fasting-friendly ingredients and goes well with Apple Tamatar Ki Subzi or Coconut Peanut Chutney.

Method
- 1
Combine the singhara flour, chopped green chili, coriander leaves, cumin powder, turmeric powder, black pepper, and rock salt in a mixing bowl.
- 2
Gradually add water and mix until you get a smooth, pourable batter.

- 3
Heat a flat non-stick pan and pour in one ladle of batter. Gently spread it using the back of the ladle without spreading too thin, as the cheela may stick. Alternatively, swirl the pan to spread the batter evenly.

- 4
Drizzle about 1 tsp ghee or oil over the cheela and sprinkle with sesame seeds.
- 5
Cook for about 2 minutes on each side, until the cheela is cooked through.

- 6
Serve hot with Apple Tamatar Ki Subzi or Coconut Peanut Chutney.
