Sabudana Sandwich Idli
A satvik tiffin favourite of ground sabudana, curd and green chutney layer — cooked the NONG way with no onion and no garlic.

Method

Grind 1 cup sabudana into a fine powder. Transfer to a mixing bowl.

Add ½ cup curd and 1 cup water. Mix well to form a smooth batter without lumps.

Cover and let it rest for 30 minutes.

After resting, divide the batter into two parts: 1 spoon in one bowl and 4 spoons in another.

Add 3 tbsp green chutney to the larger portion and mix well to make green batter.

Grease small idli bowls with oil.

Add ½ tsp baking soda to green batter, mix well. Pour 1 spoon into each bowl. Do not overfill.

Heat water in a large vessel with a stand or ring inside. Place a plate on top, cover, and steam for 3 minutes.

Add 1 tsp baking soda and ½ tsp salt to the white batter. Mix well.

After 3 minutes, pour 1 spoon of white batter on top of the set green layer in each bowl.

Sprinkle black pepper powder and red chili powder on top (optional).

Cover and steam for 7-8 minutes until cooked through.

Let it cool for 5-10 minutes. Loosen edges with a knife and unmold.

For tempering: heat oil, add cumin seeds, green chilies, and curry leaves. Pour over the idlis.

Offer to Lord Jagannath with tulsi leaves and serve.
