Sabudana Khichdi

The classic vrat staple — pearly sabudana tossed with potato, roasted peanuts and rock salt. Fully falahari, perfect for Sawan Somwar and Ekadashi fasting.

Method

    Wash 1 cup sabudana thoroughly. Add enough water to immerse it (about 1 inch above). Cover and soak for 3 hours or overnight.

    After soaking, check that all water is absorbed and sabudana is soft and not sticky.

    Heat 6 tbsp peanut oil in a pan. Add 1 tsp cumin seeds and let them crackle.

    Add ginger paste, green chilies, and curry leaves. Mix well.

    Add 2 cut potatoes and mix. Cover and cook on low flame for 2-3 minutes.

    Mix once and cook until potatoes are crispy and golden (about 4-5 minutes).

    Add rock salt and roasted crushed peanuts. Mix well.

    Add the soaked sabudana and mix gently until well combined.

    Add lemon juice and coriander leaves. Mix gently.
