Lapsi
A satvik sweet of daliya, jaggery and ghee — cooked the NONG way with no onion and no garlic.

Method

Take 4 cups of water in a vessel and bring to a boil.

In a pan, heat ¼ cup ghee.

Add 1 cup daliya and roast on low flame for 7-8 minutes until golden brown. Stir continuously to ensure even roasting.

Add 3-4 cloves, 10 roughly chopped cashews, and 2 tbsp finely chopped almonds. Roast along with daliya until golden.

Slowly add the hot boiled water (4 cups) to the roasted daliya. Mix well.

Cover and cook for 15 minutes.

After 15 minutes, the daliya will swell and absorb water. Cover and cook for another 15 minutes (total 30 minutes).

Add 1 cup finely chopped jaggery. Mix well.

Cook for 5 more minutes till jaggery dissolves and water is absorbed. Stir continuously to prevent sticking.

Add 1 tbsp ghee and ½ tsp cardamom powder. Mix well.

Garnish with finely chopped almonds and pistachios.

Place Tulsi leaves and offer to Lord Jagannath.
