Method

    Remove seeds from 10-12 dates. Add ¾ cup hot milk and let soak for 30 minutes until the dates become soft.

    Soak 6-7 saffron strands in ¼ cup hot milk for 30 minutes.

    Roast 10-12 almonds and 10 pistachios in a dry pan on low flame for 2-3 minutes until crunchy. Crush coarsely in a mortar — do not make a fine powder.

    Blend the soaked dates and milk into a smooth paste in a blender.

    Bring 2 cups milk to a boil on medium flame — about 7-8 minutes.

    Once boiling, reduce flame to low. Add the saffron milk and date paste. Mix well.

    Add the coarsely ground dry fruit powder. Boil on low flame for 5-6 minutes. The milk will thicken naturally from the dates — no sugar needed.

    Turn off heat. The milk will thicken further as it cools.

    Serve hot in winter or chilled after refrigerating.

    Garnish with chopped roasted almonds and pistachios.
