Vrat Ke Momos (No Onion No Garlic Momos)
Vrat momos made with a singhara atta wrapper and a filling of paneer or grated raw banana or lauki, seasoned with ginger, green chilli, black pepper and sendha namak. Roll the rested dough as thin as you can and pleat the momos firmly so they hold together in the steamer. They are served with a bright onion-free chutney of blanched tomatoes, Kashmiri chillies and ginger.

Method
- 1
Heat 1 tablespoon ghee in a pan over medium heat. Add chopped ginger and green chilies and sauté for about 30 seconds.
- 2
Add the paneer or grated raw banana/lauki, rock salt, and black pepper. Stir-cook for 2–3 minutes until the excess moisture evaporates. Remove from heat and let the filling cool.
- 3
Combine the vrat flour and rock salt in a bowl. Gradually add warm water and 1 teaspoon ghee, kneading into a smooth, pliable dough.

- 4
Cover the dough with a damp cloth and let it rest for 15 minutes.
- 5
Divide the dough into small, equal-sized balls. Roll each ball into a very thin circular disc using a little dusted flour.

- 6
Place a small spoonful of the cooled filling in the centre of each disc. Pleat and fold the edges together to seal the momos securely.
- 7
Grease a steamer plate with oil or ghee and arrange the momos with some space between them. Steam over boiling water for 10–12 minutes, until the covering is translucent and cooked.
- 8
For the chutney, blend the blanched tomatoes and soaked Kashmiri red chilies into a smooth paste.

- 9
Heat 1 tablespoon ghee in a pan. Add ginger paste, followed by the tomato-chili puree and rock salt. Simmer for about 5 minutes until the chutney thickens.
- 10
Serve the Vrat Momos hot with the prepared chutney.
