Vermicelli Upma
A satvik tiffin favourite of vermicelli, chana-urad dal tempering and sambar masala — cooked the NONG way with no onion and no garlic.

Method

Heat 1 tbsp oil in a pan. Add 3 cups vermicelli sev and fry on low flame till golden brown (5-6 minutes). Keep stirring to prevent burning. Transfer to a bowl.

Heat 3 tbsp oil in a pan. Add 5 tbsp chana dal and 2 tbsp urad dal. Roast on low flame till light pink. Stir continuously.

Add 1 tsp mustard seeds, 1 tsp cumin seeds, ½ tsp turmeric powder, ¼ tsp asafoetida, 3-4 chopped green chillies, and few curry leaves. Sauté for a few seconds.

Add 1 carrot (cut), ½ cup beans, 1 potato (cut), and ½ cup sweet corn. Mix well.

Add salt to taste. Cover and cook on low flame for 3-4 minutes until vegetables are cooked.

Add 2 tbsp sambar masala. Mix well.

Add 4 cups water and ½ cup fresh peas. Mix and let it boil for 4 minutes.

Add the roasted vermicelli sev. Mix well.

Cook on low flame till all the sev absorbs the water (7-8 minutes). Mix once and cover while cooking.

Once done, turn off the stove. The vermicelli upma will become even more fluffy after cooling with no stickiness.

Serve with any chutney or as is.
