Til Laddu
A satvik sweet of sesame seeds, jaggery and no-bind grind — cooked the NONG way with no onion and no garlic.

Method

Heat a pan on low flame. Add 1½ cups sesame seeds and dry roast for 3-4 minutes, stirring continuously, until they start to pop. Do not let them burn.

Remove from heat and let the sesame seeds cool completely.

Transfer the cooled sesame seeds to a blender. Grind coarsely — do not make a fine powder.

Add 1 cup finely chopped jaggery to the blender. Grind together well. The natural oils released from the sesame seeds during grinding provide the binding — grind until the mixture holds together.

Transfer to a mixing bowl. Mix well with hands.

Take small portions and shape into tight, smooth laddus. If the mixture feels dry and doesn't bind, pulse it again in the blender for a few seconds.

This recipe makes about 12 laddus.
