Sukhi Arbi
A satvik sabzi of arbi (taro), ajwain and amchur — cooked the NONG way with no onion and no garlic.

Method

Apply oil on hands to prevent itching. Peel the arbi.

Cut arbi lengthwise — first in half, then into medium-sized long pieces.

Heat 5 tbsp oil in a pan. Add arbi pieces in a single layer.

Cover and cook on low flame for 5 minutes, stirring in between so it fries evenly from all sides.

Cover and cook again for 9-10 minutes until golden and crispy.

Remove fried arbi to a plate.

In the same pan, heat 2 tbsp oil. Add 1 tsp cumin seeds, ½ tsp celery seeds, ½ tsp turmeric powder, ¼ tsp asafoetida, 1 chopped green chili, and 1 tbsp chopped ginger.

Sauté on low flame until fragrant.

Add 1 tsp red chili powder. Mix quickly.

Immediately add the fried arbi. Mix well. Ensure the masala is dry, not runny.

Add 1 tsp dry mango powder (amchur). Mix everything well. If amchur is unavailable, add 1 tbsp lemon juice after cooking.

Sukhi Arbi is ready.

Serve with dal, rice, chapati, phulka, or paratha.
