Raw Banana Tikki
Raw banana tikki with a surprise filling. Boiled, grated raw banana is cooked with ginger, green chilli, amchur, lemon and warm spices, bound with singhara atta, then wrapped around a sweet-hot stuffing of chopped dates, cashews and ginger. The tikkis are shallow-fried slowly in ghee until golden on both sides. Serve them hot with dhaniya-pudina chutney.

Method
- 1
Remove the seeds from the dates and finely chop them. Combine the dates with chopped cashews, ginger, green chillies, and a little salt. Set aside for the filling.
- 2
Boil the raw bananas in water for about 15 minutes. Allow them to cool completely, then peel and grate them.
- 3
Heat 1 teaspoon ghee in a pan over low heat. Add cumin seeds and let them crackle.

- 4
Add chopped green chillies and ginger, and sauté for a few seconds.
- 5
Add the grated raw banana, salt, red chilli powder, amchur, lemon juice, singhara atta, clove powder, cinnamon powder, and cardamom powder. Mix well and cook for a few minutes.

- 6
Turn off the heat and allow the mixture to cool. Add chopped coriander leaves and mix well.
- 7
Divide the banana mixture into equal portions. Flatten each portion in your palm, make a small cavity in the centre, and place some date filling inside.
- 8
Cover the filling completely and seal the edges. Shape the mixture into round, flat tikkis and repeat with the remaining mixture.

- 9
Heat a skillet over low-medium heat and add 1 tablespoon ghee. Place the stuffed tikkis on the skillet and shallow-fry until golden brown on both sides, about 8–10 minutes per tikki.
- 10
Remove from the heat and serve the Raw Banana Tikkis hot with Dhaniya Pudina Chutney.
