Rajgira Halwa

Method

Heat a little less than ½ cup ghee in a pan until melted.

Add 1 cup Rajgira flour and mix well.

Cook on low flame, stirring continuously, until the flour turns golden in color.

Add 1½ cup milk slowly while stirring to avoid lumps.

Cook until the milk and flour are mixed well and ghee starts leaving the sides.

Add ¾ cup sugar and mix until it melts and combines well.

Add cardamom powder, raisins, chopped almonds, and pistachios. Mix well.

Turn off the flame. Garnish with chopped almonds, pistachios, and dried rose leaves.

Offer to Lord Jagannath with tulsi leaves and serve.
