Method
- 1
Heat a heavy kadai or pan on low heat. Add the grated coconut.
- 2
Roast the coconut for 4-5 minutes, stirring often. Do not let it turn brown — the aim is only to remove some moisture.
- 3
Add the jaggery and mix it well with the coconut.

- 4
Cook the coconut-jaggery mixture for 6-7 minutes, stirring continuously. The jaggery will melt and the mixture will thicken slightly. Do not overcook it, or the naru may turn hard.
- 5
To check if it's ready, cool a small portion and try shaping it into a ball. If it holds its shape easily, the mixture is ready.
- 6
Turn off the heat and let the mixture cool slightly.

- 7
Add the cardamom powder, if using, and mix well.
- 8
Let the mixture cool completely.
- 9
Grease your palms with a little ghee or coconut oil. Take small to medium portions and roll them into balls.

- 10
Store the Narkel Naru in an airtight container and refrigerate. This makes about 10 naru.
- 11
Serve as a sweet, or offer as naivedyam.
