Malai Paneer
A fully vrat-friendly sabzi of paneer, rock salt and almond-saffron gravy — no onion, no garlic, no compromise.

Method

Soak 2 tbsp almonds in water for 1 hour. Drain and blend with green chilies and ginger into a smooth paste.

Heat 1 tbsp ghee in a pan. Shallow fry paneer triangles until golden and crispy on both sides. Remove and set aside.

In the same ghee, add the almond-chili-ginger paste. Spread it evenly and cook on low flame for 4-5 minutes until slightly thickened.

Add cardamom powder, black pepper powder, saffron strands soaked in ½ cup warm milk, and rock salt. Mix well.

Add 1 cup water. Mix and let it simmer on low flame.

Add 1 tbsp sugar and the fried paneer cubes. Mix gently.

Cover and cook on low flame for 2-3 minutes until the paneer absorbs the flavors and becomes soft.

Add fresh cream and Ekadashi garam masala. Mix gently and cook for 1 more minute.

Serve with sweet potato paratha, Rajgira paratha, or Rajgira puri.

Offer to Lord Jagannath with tulsi leaves.
