Kheer Chor Gopinath Amrit Kheer
A satvik sweet of govind bhog rice, cow milk and caramelized sugar — cooked the NONG way with no onion and no garlic.

Method

Wash ½ cup basmati rice thoroughly and soak for 1 hour. Drain.

Crush the soaked rice by hand into small pieces. We don't want long grains.

Heat 1 tbsp ghee in a pan. Add 2 tbsp chopped almonds and 2 tbsp chopped cashews.

Roast on low heat until golden and crispy. Transfer to a plate.

In the same ghee, add 3 tbsp raisins. Cook until puffed. Transfer to a plate.

Add 2 tbsp sugar to the pan. Melt on low flame, stirring constantly, until slightly brown. Do not burn it.

Add crushed rice to the caramelized sugar. Mix well. Turn off stove for a second if needed to prevent burning.

Add ¼ cup water. Mix and cook on low heat for 2 minutes.

Add 2 liters cow's milk. Mix well.

Cook on medium heat, stirring constantly to prevent sticking. Stir occasionally until rice is completely cooked.

After about 15 minutes, milk will reduce and thicken, and rice will dissolve.

Add remaining sugar (from the ½ cup). Mix well.

Add ½ tsp cardamom powder. Mix.

Add roasted dry fruits. Mix well.

Turn off stove. Kheer is ready when texture is thick and creamy.
