Instant Sabudana Vada
A fully vrat-friendly snack of sabudana, potato and rock salt — no onion, no garlic, no compromise.

Method

Take 1 cup sabudana in a mixer jar and grind to a fine powder.

Take ½ cup sabudana and fry until crispy, then crush it.

In a mixing bowl, add sabudana powder, crushed fried sabudana, boiled mashed potatoes, crushed ginger-chili, coriander leaves, rock salt, roasted cumin powder, and lemon juice.

Mix well and let it rest for 10 minutes. The sabudana will absorb water and the mixture will harden slightly.

Add 2 tsp water if needed. Mix lightly to combine.

Make small balls and shape into thin oval vadas. Keep them as thin as possible for crispiness.

Heat oil and deep fry on medium flame until golden brown and crispy from all sides.

Serve hot with green chutney.
