A satvik sweet of besan, semolina and ghee — cooked the NONG way with no onion and no garlic.
Cook along · 12 steps
Method
- 1
Take 1 cup gram flour and 2 tbsp semolina in a pan. Roast on low flame for 5-6 minutes until raw smell is gone. Do not burn.
- 2
In a vessel, take 2½ cups water. Add 2-3 drops yellow food colour and 1 cup sugar. Dissolve sugar on low flame. Boil for 5 minutes. Do not make any string consistency.
- 3
In a separate pan, heat ½ cup ghee on low flame.

- 4
Add roasted gram flour mixture. Fry well in ghee for 6-7 minutes until texture and colour change — yellow and slightly brown.
- 5
Add 1 tbsp chopped almonds and 1 tbsp chopped cashews. Mix — the heat of the gram flour will roast them.
- 6
Add 2 tbsp milk little by little while mixing quickly. The mixture will become crumbly.

- 7
Gradually add the sugar syrup little by little, mixing well to avoid lumps.
- 8
Add 1 tsp cardamom powder. Mix well.
- 9
The gram flour will absorb the syrup. Cook until it reaches the right consistency.

- 10
Add 2 tbsp ghee at the end for gloss and smooth texture.
- 11
Garnish with finely chopped pistachios and rose petals.
- 12
Place Tulsi leaves and offer to Thakurji.
