Falahari Biryani

A royal fasting biryani layered with sama rice, paneer, cashews and rock salt — all the biryani drama, zero grains, fully vrat-compliant.

Method

    Wash sama rice 2-3 times thoroughly.

    Boil 2 cups water with ½ tsp rock salt and 1 tsp oil. Add rice, cover, and cook for 10 minutes, stirring in between to prevent sticking.

    After 20 minutes, check if rice is cooked. Mix well and let it cool for 30 minutes. Do not stir when hot.

    Heat oil in a pan. Fry cashews until golden, then remove. In the same oil, fry paneer until golden, then remove. Fry raw banana pieces until golden brown and set aside.

    In a large pan, heat 3 tbsp oil. Add cumin seeds and bay leaves. Add chopped carrots, potato, and cauliflower. Cover and cook for 5 minutes.

    Add capsicum and cover again. Cook for another 5 minutes until vegetables are cooked.

    Add ghee and tomato puree. Add rock salt and mix. Cook for about 15 minutes until tomatoes release their flavor and are well cooked.

    Add fried paneer, red chili powder, coriander powder, and garam masala. Mix well and cook for 1 minute.

    Add dry fruits and raisins. Mix well.

    Add coriander leaves and mix. Layer the rice on top. Add crispy cashews on top. Cover and let it sit for a few minutes before serving.
