Method

    Boil ½ liter cow's milk in a pan. Add 5 tbsp sugar and saffron strands soaked in milk.

    Simmer on low flame until milk reduces to half (rabri consistency). Stir occasionally to prevent sticking.

    Grind 2 tbsp raisins into a fine powder.

    In a mixing bowl, add 1 cup grated fresh paneer, raisin powder, water chestnut flour, and ¼ tsp cardamom powder.

    Knead the mixture with light hands for 2-3 minutes until smooth, like making rasgulla.

    Make small balls from the mixture and press them slightly to form flat dumplings. Make 7-8 dumplings.

    Add 1 tsp cardamom powder to the rabri, mix, and turn off the flame.

    Heat oil in a pan. Fry dumplings on low flame until light golden from both sides. Do not color them too much as they will cook further.

    Reheat the rabri. Add the fried dumplings and cook for 2-3 minutes so they absorb the rabri well.

    Garnish with finely chopped almonds and pistachios. Offer to Lord Jagannath with tulsi leaves and serve.
