Boondi Raita
A satvik raita of boondi (besan), curd and roasted cumin — cooked the NONG way with no onion and no garlic.

Method

Take 1 cup plain boondi. Add 2 cups water and soak for 5 minutes.

Strain the boondi and leave aside for 5 minutes to drain excess water.

Take 1½ cup curd in a bowl. Whisk until smooth and creamy.

Add ¼ cup water and mix to get the right consistency.

Add ½ tsp red chilli powder, ½ tsp roasted cumin powder, salt, 1 finely chopped green chilli, 1 tbsp sugar, and 2 tsp finely chopped coriander. Mix well.

Add the soaked boondi. Mix gently.

Garnish with a little boondi, roasted cumin powder, red chilli powder, and finely chopped coriander.

Place Tulsi leaves and offer to Lord Jagannath.
