Baby Corn Fried Rice

A satvik rice dish of baby corn, maida-cornflour coating and cooked rice — cooked the NONG way with no onion and no garlic.

Method

    Cut 250g baby corn into pieces.

    Boil water in a pan. Add the cut baby corn and salt to taste. Cook until 80% done, about 5-7 minutes. Do not overcook.

    Strain the baby corn into a mixing bowl.

    Add salt to taste (use less as it was already boiled with salt), 2 tbsp refined flour, and 2 tbsp cornflour. Mix lightly with a spoon.

    Add 2 tbsp water and mix so the flour coating spreads well on the baby corn.

    Heat oil on medium flame. Fry the baby corn until golden brown and crispy. Stir occasionally to prevent sticking.

    Remove and keep aside. Making Fried Rice:

    Heat 2 tbsp oil in a pan. Add ½ tsp cumin seeds, 1 finely chopped green chili, ¼ cup capsicum, and ¼ cup beans.

    Sauté on high flame — cook until just done but still crunchy. Do not overcook.

    Add salt to taste, 1 tsp red chili powder, 1 tsp coriander powder, 1 tsp garam masala, ½ tsp chaat masala, and 2-3 tsp tomato ketchup. Mix well.

    Add 2 tbsp finely chopped coriander leaves. Mix on low flame.

    Add 2-3 tbsp water and mix. Add the fried baby corn and mix well.

    Add 2½ cups cooled cooked rice and mix gently. Do not use hot rice as it will break.

    Garnish with coriander leaves. Cover and rest for a minute.

    Place Tulsi leaves and offer to Lord Jagannath.
